for swamps
5 eggs
120 g of sugar
80 g of flour
60 g of liquid oil
lemon peel
1 vanilla
2 tablespoons of cacao
for the cream
1 liter of fresh milk
4 egg yolks
150 g of flour
200 g of sugar
1 sack of vanilla
0.5 lemon grated bark
100 g of natural chocolate
100 g of white chocolate
100 ml of liquid pastry cream
For syruping
1 kcal water, mixed with 3 tablespoons of liqueur
1. Preheat the oven 180 degrees. Divide egg whites. Beat the snow on the snow and gradually add the sugar in a continuous break.
2. Then add yolks, melted butter, vanilla, grated lemon peel and sifted flour. Stir gently with spatula or spoon.
3. Divide the dough into two pieces and stain one with the cocoa dissolved in a little hot water.
4. Cover the bottom of a rectangular tray with baking paper. Pour the white dough in one half of the tray and the brown in the other. Bake and roast the swamps for 20 minutes.
5. In a saucepan mix the flour and sugar for the cream. Stir, add shredded lemon peel, vanilla, some fresh milk and mix to get a smooth pulp. 6. Put the yolks and pour the rest of the milk. Boil the cream until thickened.
7. Divide the finished cream into two parts. In one place the black chocolate and the other in the white one. Stir until the chocolate melts. Lubricate the surface of the cream with oil so that it does not get crust. Allow to cool completely.
8. Beat the cream on snow. Briefly break the white and dark cream to avoid lumps, then add equal amounts of cream to them. Stir well.
9. Cut the cooled blade along 4 strips. Sip the strips of marsh with the brandy diluted with water. Lubricate the white part with dark cream and brown with white.
10. In the middle of a tortilla, turn one of the snail strips. Then glue the second around it, alternating the colors as desired, depending on what pattern you want to get. Sort the rest of the strips the same way.
11. Smooth the cake with the remaining cream and decorate it. Remove the caramelized nuts on top of it, arrange different fruits on top, place fresh squash leaves between them and finally melt the fruits with melted gelatin.
